Espadín

Using volcanic rock-filtered water, our signature ESPADÍN is clean and crisp with a smooth finish. As you sip, it may start sweet then open up with a floral flourish. This is a bright, easy Espadín.

Mexicano

Using volcanic rock-filtered water, our MEXICANO draws from the land, wild and rich with an earthy finish. Enjoy the touch of anise contrasted by the citrus as you sip.

The Artisanal Process

Harvest

Selecting quality maguey is the first step in making a premium mezcal. Our mezcaleros choose only the ripest agave and do so in a way that ensures sustainability of future agaves.

Smoke

Roasting agave hearts takes about five days. Our mezcaleros carefully monitor the agaves to get the right flavor without over or under smoking.

Crush

Crushing the roasted agave hearts creates a juicy pulp. Our mezcaleros smash agave hearts with a one ton stone, true to the artisanal method.

Ferment

Fermenting begins with natural yeasts and takes about two weeks. Our mezcaleros tend to the fermenting agave pulp using all their senses: stirring, smelling, tasting, and watching until they are satisfied that it is ready.

Distill

Distilling is done in artisan-made copper stills. While most of ETLA mezcals are twice distilled, our mezcaleros’ experience ensures the premium product that never requires any additives.
